ABOUT THE PLANT
German chamomile is a fragrant, low annual herb growing up to 0.6 m tall with delicate feather leaves and simple daisy-like white flowers on a single stem. Also known as German chamomile, Hungarian chamomile, and sweet false chamomile, Matricaria recutita is the True (and Blue) Chamomile which grows all over Europe, particularly Central and Northern Europe, with Hungary being its main producer.
ABOUT THE OIL
German, or Blue, Chamomile essential oil is a deep, inky-blue somewhat viscous oil obtained by steam distillation from the dried flower heads of Matricaria recutita. The essential oil content of the plant is highest at the beginning of flowering. The pure undiluted oil has an intense odor which many find overwhelming and unpleasant.
The anti-inflammatory properties of German chamomile oil are well documented when used topically. The compound most attributed to German chamomile’s anti-inflammatory property is not something in the plant itself, but formed from the naturally-occurring compound matricarin, which is converted into the blue-colored chamazulene by the action of steam during distillation. In 1664, when German chamomile was first distilled in glass, the distillers were surprised to see the blue color, which they previously thought was due to a reaction of the oil to the copper stills.

Since antiquity chamomile flowers have been used internally for digestive disorders and externally for skin and mucous membrane irritations. German chamomile flowers are now extensively used a an herbal tea and the essential oil is widely used in cosmetics.
It has been difficult to ascertain which species were used historically, as many plants within the Asteraceae family were referred to by the common name of Chamomile.
